Tomato, Mushrooms Baked Eggs

Good morning! 


Breakfast-worthy, this Tomatoes, Mushrooms, Vegetables Oven-Baked Eggs is a balanced mix of proteins from eggs and edamame, fiber from vegetables, and carbs from some good ol' crusty bread (bread to dip into the runny yolks!). 

Brunch, lunch, dinner - this dish will have no trouble fitting in.

Tomatoes, Mushrooms, Vegetables Oven-Baked Eggs 
Ingredients:
2 green onions, finely chopped, divided use
Dash of curry powder
4-5 organic white mushrooms , thinly sliced
2 garlic cloves, finely minced, divided use
2-3 organic cherry tomatoes or small heirloom/dry-farmed early-girl tomatoes, finely chopped
1 cup blanched organic spinach
1 cup blanched organic broccoli
1 cup blanched organic edamame
1/2 cup diced organic bell peppers
2 organic eggs
Salt and ground black pepper

Directions:
[Advanced Prep.]: In about 1tsp cooking oil, saute half the chopped green onions, curry powder, mushrooms till mushrooms are cooked, and reduced in volume. Dish out, set aside. Add 1 more tsp cooking oil, saute, remaining green onions, garlic, and tomatoes till tomatoes are slightly cooked down. Salt to taste. Turn off heat. Add in spinach, broccoli, edamame, bell peppers, cooked mushrooms, give it a good stir. Then spread the vegetable mixture on a baking dish.

Preheat oven 350F. Crack the eggs on the cooked veggie mixture (you can add a few thin slices of organic tomatoes if you wish) then bake 350F for about 15 minutes or more till eggs are cooked (whites are set and yolks runny - well, that is if you prefer runny yolks; else cook it longer still yolks are fully cooked).
