Cabbage Quinoa Chicken Salad
A salad fit and mighty as a main dish protein salad bowl featuring shredded chicken, quinoa, red cabbage, Brussel sprouts, snow peas.

Ingredients:
1 serving shredded chicken breast, leftover from rotisserie chicken
1 serving of cooked quinoa (can be batch-cooked and prepared in advance)
3-4 servings of vegetables - red cabbage, Brussel sprouts, snow peas, or your own preference
1-2 tbsp extra-virgin olive oil + 1-2 tbsp apple cider vinegar dressing
Directions: Blanch/steam/stir-fry Brussel sprouts and snow peas. Assemble cooked ingredient as shown. Gently toss with dressing.
Leftover chicken is also good for Broccoli, Cabbage, Chicken Salad, Tandoori Chicken Salad, Chicken Salad Sandwich, Avocado, Cucumber, Kale Chicken Burger.
