Chicken and Vegetables Soba Noodles Soup

This is another homey one-dish put together - from a soup base made with chicken, flavored up with vegetables (e.g. carrots, napa cabbage) - Chicken and Vegetables Soba Noodle Soup.


Note: Added last was the red bell pepper - as I wanted to slightly cook it so that the peppers are soft-tender, and does not affect the flavor of the soup. It might become overpowering for the light soup flavor if cooked for too long in the soup.


Note1: then the baby spinach - which I merely blanched in the same soup base for 30 secs then dish out to set aside.


Mixed Beans Cabbage Soup

How was your Thanksgiving? Mine was spent at a friend's place - enjoying duck, two-ways (half roasted, another half braised with chestnuts) and other home-cooked dishes. Delicious! Thanks, friend.

Well. Ok. Thanksgiving is over. No more hard work in the kitchen for a while (at least in the next two days). But eating out 3 meals a day is not an option. A well-accepted idea for busy cooks is to cook one big pot of food and have leftovers for the next 1-2 meals. Sure beats eating out.

Me included. The same but for a different reason.I am the lazy cook.



Roasted Kabocha Squash Stuffed Green Beans Quinoa - Autumn in a Squash Bowl

In short, this is my recent creation - Autumn in a Squash Bowl; or more exactly - Pomegranate Seeds on Roasted Kabocha Squash Stuffed with Quinoa, Roasted Cabbage, Green Beans, Carrots.


No new recipes are involved. Basically, it's a combination of dishes I have done recently: Roasted Green Beans in Turmeric-Infused Quinoa and Spicy Roasted Cabbage, with an attempt to make it more "fall-like" and more wholesomeness by adding spicy roasted cabbage to toss into the "already vegetabley" quinoa mix.

Tip: This is a good way to freshen up leftovers (the veggie-quinoa mix was cooked in huge batch the previous day, and the remainder was chilled in the fridge)

Come today, prepare the fresh ingredients: (1) get ready the roasted cabbage; (2) a half-size kabocha squash (Note: thank goodness the grocery store already slice it into half and I bought that half with no intention of chopping/slicing); finally, don't forget some (3) fresh pomegranate seeds


Looks good to wow your guests, is it not?


Reuse and Recycle Gift-Wrapping

"I'm so learning this!" I said, when I saw that interesting gift-wrapping at Anncoo's blog. I did not have any holiday gift wrapping paper at that time and guess what? I decided to do a Reuse and Recycle Gift Wrap using the recycled brown paper bags from the grocery stores.

How do my "Christmas Tree on a Box" looks?


Even the ribbon and "paper ornaments" are recycled items. For example, the "grape" and "chocolate" ornaments are magazine cut-outs.

Healthy diet, exercise, good quality sleep - cheers to good health!

I had no choice but to stop my exercise (gym) routine when my elbow was injured two months ago. It felt terrible and uncomfortable not moving my body and exercising for two entire months! I am not into Extreme Body Workout - my gym routine (usually twice per week) consists of about 20-min cardio (aerobic) and 15-min weight-bearing exercise. In addition, my goal in exercise is not to lose weight for that attractive Beach Body, for example; rather it is for the good of long-term health. A healthy diet, exercise and getting good quality sleep are essential to good health, did you know?


Holiday Gift Ideas

Who still wears a watch these days? Want the time? Just look at your cell phone or ask the person beside you. Seriously, I am one who still does not use the most advanced cell phone and has gradually lost the urge to wear a watch. Get these gadget(s) away from me, except my computer! Yes, I get the time from my computer and that also explains how much time I spend in front of my computer! When I'm in the kitchen, I tell the time by the clock on the microwave. Not sure if there is anything to do with age but more precisely, it might be the unconscious need to stay away from "being in touch" via high-tech gadgets. Yes, work life has hurt in that sense. The cell phone reminds you of your boss; and a watch means deadlines!


Stir-Fry Kabocha Squash 清炒日本南瓜

Till now, I cannot enjoy fall's bounty of pumpkin, butternut squashes and other winter (hard-skinned) squashes.

This Stir-Fry Kabocha Squash was made months earlier before the accident happened and when I could effortlessly slice through kabocha squash with my right hand. If you do enjoy a simple stir-fry of winter squash, feel free to substitute with pumpkin or butternut squash.



Whether it is kabocha squash, pumpkin or butternut squash, they are all rich in beta carotene, iron and vitamin C ! 

Simply pre-fry green onions, some garlic, add in the diced squash to saute till cooked, then salt and ground white pepper to taste, finish off with finely chopped cilantro.

Basic ingredients and quick cooking rewarded with absolutely delicious, savory and sweet balance of flavors.

Green & Yellow Split Pea Soup

Written about yellow split peas some time ago, and also cooked them in light stews.

Hairy Melon Stew with Green and Yellow Split Peas

Green split pea has a slightly more "pea" flavor, yellow a little milder, but end of the day, hardly noticeable. If nutrients are the concern, don't worry about it as there is no big difference. The color mix is useful mainly for visual presentation - with a mix of yellow and green might complementing the dish better than mono-colored peas, don't you think?

I cooked hairy melon soup (recipe here) again, using a mix of yellow and green split peas this time.


Recently, I have been using split peas in cooking quite often as I find them really easy to use and incorporate in pronto (don't have to soak them overnight like dried chickpeas). Plus, they cook relatively fast without overnight soaking,

Dried peas/beans that requires no overnight soaking and cooks fast - that...is especially useful.

Roasted Green Beans in Turmeric-Quinoa

The clock ticker above showed just about seven days to Thanksgiving. How are you planning to celebrate Thanksgiving - feasting? shopping? catching up with family and friends? vacation?

I did not know that greens beans is part of the holiday Thanksgiving tradition till I saw various green beans dishes popping up across the web.


What is better than incorporating roasted green beans into a quinoa mixture also filled with roasted bell peppers, carrots? Feel free to adjust the ratio of vegetables to quinoa. More veggies less quinoa or vice versa - it's up to you.

Cook the quinoa over the stove (infusing with pinch of ground turmeric) about 15mins; while roasting the vegetables with spices (turmeric, coriander, red chilli pepper) in the oven 375F for about 20 mins till the vegetables are cooked tender.


Buying Tip: I buy truRoots Organic Quinoa from Costco at about $10/4lbs and that is one of the best deal for quinoa, in my opinion. I used to buy quinoa in the bulk section when initially trying out this whole-grain (or seed) but ever since quinoa has become a "rice-substitute" staple (I have them at least once a week!) together with the other "carbs" such as brown rice/millet for congee; and pasta, I have decided to buy them in bulk quantity (wholesale price).


Indian-Style Hairy Melon Stew 印度式毛瓜汤

This Homemade Indian-Style Hairy Melon Stew is somewhat a simplified version of Sambar.

As simple as hairy melon, split peas and tomatoes in aromatics of onions, garlic, ginger, curry leaves, cumin, dash of coriander and ground turmeric - that's basically it. Salt to taste and generous garnish of finely chopped cilantro.

It is really a light stew that nevertheless warm us inside out in the cold autumn nights.

Oxtail Soup (bone "healing" part 4) 牛尾汤

It has been more than eight weeks since my right elbow was fractured. It usually takes more than a month (sometimes up to 3-4 months, depending on severity) to completely heal the fractured bones, including injured (broken) tendons, cartilage, soft tissues, biceps, triceps, muscles.

To help myself heal faster and speed up recovery, I have been cooking bone broth at least once a week during the initial stages of recovery and to-date, I have cooked bone broth with pork bones once, beef bones twice, and chicken bones many times.

You can say I am desperate to heal!


This is my first time cooking oxtail and for similar reasons, the purpose is to drink up the "collagen" and minerals (calcium, iron, etc.) that hopefully helps me heal faster. Why did I choose oxtail? It can be beef shanks, other bone parts too.

Oxtail is bony and gelatinous too, and usually takes a long time to cook till fork-tender. If it means requiring a relatively longer duration to cook, it also means they contain more connective tissues, muscle fibers and collagen. These days, I am super sensitive to such words related to the bone. :D

Since it is a first time for me, I reckon the most idiot-proof way is to stove-cook the oxtail with gentle heat over a long duration (at least 3 hours); and with the most basic and common root vegetables such as onions, carrots, and celery to flavor up this Oxtail Soup. Surely, it won't fail me?



Sweet Potato Porridge 番薯粥

Of all the fall/winter bounty of pumpkin, butternut squash, acorn squash etc. - I can handle none at this moment due to my injury! Thankfully, I could still turn to the sweet potato - it's easier to peel, at least.

Late last week to early this week, the temperature around the Bay Area has been dipping fast. On such cold frosty nights, I decided to cook some sweet potato porridge or congee - 番薯粥 (Fan Shu Zhou) for dinner. So good to have piping hot congee to warm myself inside out, and it really feels comfortable. This congee goes well with side-dishes such as  Chokos, Cabbage and Mushrooms Stir-Fry, Pickled Leaf Mustard with Chicken, steamed side-dishes or even a light melon stew.


Instead of white rice, I used brown rice and millet 小米 (both grains are more nutritional than white rice). Millet also fluffs up rather well when cooked, so it renders the congee a more gruel-like consistency.

The above stainless steel pot is part of my TATUNG TAC-6G RICE COOKER that I am currently using. Ever since my Rice Cooker Cookbook has been completed (and published), I have switched from a conventional rice cooker to this multi-functional rice cooker and steamer.

It cooks rice, congee and soups really well by using indirect heat on the food contents in the stainless steel inner pot (See diagram above). For example, fill the inner pot with food contents and water if required, then place the inner pot back into the cooker that is also filled with water. When Cook Switch is turned on, the food contents in the stainless steel inner pot is in effect, indirectly "steamed" to cook by the surrounding boiling water in the cooker. It has a "Keep Warm" function as well.

I like this way of cooking my soups as the indirect heat does not allow the soup in the inner pot to boil off so quickly (since it is the water in the cooker that is boiled off). This is similar to a double-boiled method. In short, you don't have to re-add much water to the soup while the soup is cooking, thus maximum nutrition and flavor is retained. Once the water in the cooker is boiled off, the cooker turns to "Keep Warm" function automatically.

Sardine and Roasted Cabbage Pizza

How does Sardine and Cabbage pizza sound? Unheard of?

How about pita bread as the pizza base, with homemade sardine-tomato sauce using Wild Caught Brisling Sardines in Spring Water...


...baked in the oven (375F abt 15 mins till pita bread crisp up), then topped with roasted cabbage and before serving, add some fresh taste with arugula.



Woo la la!

These Sardine and Roasted Cabbage Pizza and Roasted Cauliflower Pizza are my favorite pizza creations to-date.

I have said it many times. Crown Prince Wild Caught  Brisling Sardines in Spring Water is my favorite canned sardines (in fact, canned fish). Recently I make my first food (grocery) purchase from Amazon and you are right, I got them in pack of 12 and each can rounds up to about $2.60 (much cheaper than retail price at natural health stores - usually about $3.50/can) ! Really a good deal. And these sardines are so tasty, fit to be consumed straight from the can (no cooking required).

Preserved (Pickled) Leaf Mustard with Chicken 雪菜鸡肉

If you have ever tried Soup Noodles with Preserved (Pickled) Leaf Mustard and Shredded Pork 雪菜肉丝面 in a Chinese noodle shop or eatery, recall the base flavors of the soup noodles that is derived from the savory-umami and the lightly spiced mix of preserved leaf mustard and shredded pork, making it so appetizing.

Preserved (Pickled) Leaf Mustard and Shredded Pork 雪菜肉丝 is a popular dish of Zhejiang region (partially borders Shanghai) of China.


What makes Noodles with Preserved (Pickled) Leaf Mustard and Shredded Pork really "fast-food" in many noodle eateries is because preserved leaf mustard can be made in batches in advance, kept in the fridge for two to three days (sometimes even longer). Don't forget - the mustard greens have been preserved - so they keep longer (and better) than a dish made from fresh vegetables fried with pork.


Sambar (Sambhar) - Vegetarian Thanksgiving

Certainly, I hope this was better than the last time. Sambar (Sambhar) is a dish I enjoy so I yearn to make improvements every time. As Asian (Chinese) who grew up eating mainly Chinese food, Indian cooking does not come natural for me. However, since Indian cuisine is one of my favorites, I have learn a few home-cooked Indian dishes mainly from my friend's mom who is Indian; and based on what I have tried and tasted.


I kept the choice of vegetables for this vegetarian Sambar (basic cooking instructions found here) much simpler this time with winter melon, radish, green beans and cauliflower.


The correct way to enjoy Sambar is to treat it like a gravy-based dish and NOT a stew-based dish. It was funny when my friend's mother saw how me and my friend ate (or practically, DRANK!) Sambar like a soup-stew. That's not the way! You are supposed to drizzle a little gravy over rice, or dip Indian roti in them.


Right. Just imagine your classic Chinese Ginger-Soy Sauce Chicken in which we usually scoop gravy over the rice, mix it up, then eat it. Sambar should be treated and enjoyed the same way. For her to see us eat Sambar like a soup-stew, is like sending spoonfuls of ginger-soy sauce from the chicken dish, straight from the plate to the mouth.


It is less than 20 days to Thanksgiving. So how about a Vegetarian dish for Vegetarian Thanksgiving, also November 2011 theme for Healing Foods - hosted at Sreelu's Tasty Travels ?

Black-Eyed Beans 眉豆

Instead of using peanuts in these Chinese soups such as chicken feet soup and pork bone soup , black-eyed peas 眉豆 (alternatively named cowpeas, from their use as cattle fodder) have been interchangeably used as they are rather mild-flavored and doe not easily overpower the soup.

Black-eyed peas or beans

Black-eyed peas contain Vitamin A that is important for healthy skin, eyes, and a strong immune system. They also contain folate which helps with cell formation; and amounts of thiamine, vitamin B1 and vitamin C. Black-eyed peas are also rich in potassium that is critical for proper function of the muscles, including the heart (Source: Livestrong.com - Black-Eyed Peas). Black-eyed beans are great in stews, soups and salads.

Tervis Tumbler

Thank you Foodbuzz and Tervis for sending me a Tervis Tumbler.

Just in time for fall and winter - for me to hold the hot cocoa drink I have made in order to warm myself inside out. And now my hot chocolate stays warm longer, and I stay warm longer.

Due to the colder days at this time, I also try to avoid cold drinks directly from the fridge. And the double-walled insulation of this tumbler works just perfect for this situation. Every morning, I pour some refrigerated soy bean milk into my Tervis Tumbler, let it sit (for about 10 minutes) at room temperature before I drink it. And magic, no condensation on my tumbler!

Vegetarian Biryani with Chayote

Biryani is one of my favorite Indian foods (or Indian one-dish meals). In fact, I have cooked it many times - over the stove or in the rice-cooker. Typically, I tend to make this one-pot rice dish, vegetarian - then have the option of pairing it with other vegetarian (e.g. Aloo Gobi) or non-vegetarian dishes.


Other than adding bell peppers, carrots, peas and mushrooms, I also added chayote to the vegetarian biryani this time. More vegetables.
